  • Description

    "Chix & Waffs" A nice twist on the classic chicken and waffles that uses a syrup with seasonal flavors to enhance the deliciousness of the crisp bird and waffle.

  • Intro

    - 1 box of frozen mini Eggo waffles

    - 1 package of chicken breast

    - 1 six pack of hard cider (run to the liquor store!!)

    - 1 cup of whole milk

    - 2 cups of flour (1 for frying and 1 for marinade)

    - Vegetable oil for frying

    - zest of lemon

    - 2 whole cloves

    - 3 cups of sugar

    - creole seasoning

    - black pepper

    - garlic powder

    - onion powder

    - salt

    - hot sauce (any of your choosing)

  • Plot

    1.)  Take the chicken breast and slice in half then slice into 1/2 inch pieces. Remember the smaller the better. You want them to fry quickly and also fit on the mini waffle

     

    2.)  Season the chicken pieces with pepper, garlic, onion, hot sauce, and creole seasoning. Once seasoned - place in a small bow with milk and 1/2 a cup of flour (mixed together to a loose paste) that is also seasoned with some of the creole spice. Let sit for at least an hour.

     

    3.)  Heat up oil to 350 degrees and while it is warming up in the deep fryer you can start on the syrup

     

    4.)  In a large sauce pan combine the sugar, cider, cloves, & lemon zest. Let it come to a boil and once at a boil allow to simmer on low for 30-45 minutes. It allows the aromatics to perfume the liquid. Let it reduce by 1/2. If not sweet enough please add more sugar to your liking.

     

    5.)  Once chicken is heated place the remaining flour and season it with salt and pepper. Dip the marinated chicken pieces in the flour and coat well. Add directly to frying oil. REMEMBER: never crowd when frying that way you can achieve maximum crispness and not allow the oil temperature to fall; resulting in greasy food--YUCK!

     

    6.)  Chicken should cook about 7-8 minutes. It should be nice and crispy with a golden crust. With a slotted spoon or tongs remove the chicken and drain.

     

    7.)  For the waffles you can quickly bake in the oven at 400 for 5 mins or in a toaster oven as stated on the box.

     

    8.)  Once the syrup has reduced remove from heat and allow to cool to room temperature

     

     

  • The End

    Plating for this dish is quite simple. Take the waffle and place the crisped chicken piece directly on top. Finish the lite bite with the syrup right on top. Don't be stingy with the syrup! You may also garnish with a little finishing salt to enhance the salt and sweet. Sprinkle with a little green herb of choice for garnish and enjoy! Simple..tasty..and an easy crowd pleaser for the lovers of Chicken.
